FDA/NSTA Symposium:

Food Safety and Nutrition

NSTA is partnering with the Center for Food Safety and Applied Nutrition (CFSAN) of the U.S. Food and Drug Administration (FDA) to present an exciting Symposium for grade 5-8 educators on the topic of food safety and nutrition. The Symposium will be held at NSTA's National Conference on Science Education in St. Louis, MO. This event is part of a blended professional development opportunity that includes several online experiences-a discussion listserv and two NSTA Web Seminars-that extend the interactivity with FDA staff. Program Overview

symposuim participant works on food label activity When it comes to making science relevant for students, what better way than to apply it to something that is a part of their everyday lives? Food is an ideal springboard for a host of science concepts. This full-day symposium focuses on food microbiology, food processing, food epidemiology, the food label, the 2005 Dietary Guidelines, and the public health impact of food safety. FDA scientists and education specialists will share their expertise and assist participants in linking this content to hands-on, inquiry-based, classroom activities. Participants will learn how FDA investigates an outbreak of a foodborne pathogen, how to use the food label to determine serving size and calorie content, and how to reduce some of the mystery of what is in food. All activities will address national science education standards topics.


All participants will receive educational materials and information regarding FDA resources that are available electronically. A raffle of fantastic prizes will take place at the end of the program, and refreshments and lunch will be provided.


Graduate credit may be available at an additional cost to participants. To receive graduate credit, participants must pay a nominal fee and complete an action plan and a lesson plan. All Symposium participants will receive a certificate from NSTA stating the number of seating hours (8 hours).

In addition to the face-to-face Symposium at the Conference, two Web Seminars featuring the presenter of Food Safety and Nutrition will be held in the following weeks. Participants are also invited to join with the presenter in a moderated discussion listserv.

Location

The Symposium will take place in Room 250 of the America's Center Convention Center, in St. Louis, MO. Participants are responsible for arranging their own travel and housing where necessary.


Cost/Registration

Participants will pay a $44 advance registration fee or $49 onsite at the Conference. This fee covers the cost of the refreshments, lunch, and folder materials. Travel, meals, lodging, general conference registration, and graduate credit fees (where applicable) are the responsibility of participants. Register today!

Web Seminars

Two Web Seminars after the face-to-face program in March. The Web Seminars begin at 6:30 p.m. Eastern time.


Web Seminars are free, interactive, live sessions of online professional development. The 90-minute sessions feature NASA, FDA, NSF, and NOAA scientists, education experts, and NSTA Press authors. You do not have to attend the Symposium in order to participate in the Web Seminars.
